- An Esrog(Citron) is the most difficultof
all the Arba Minim(Four Species) to grow, and therefor the
most expensive .
The difficulty in growing arises from the fact that the
bush itself on which the esrog fruit grows is covered in
sharp needle-like thorns.
Yet the torah commands us to take a "Pri Ets Hadar"-a
beautiful fruit which we are told by our Sages; means unblemished(to
see the criteria of what is considered a
blemish see 4 Species Page).

- Another criteria of the
esrog is its need to be grown from a strain that is not
grafted with another fruit, this requirement is what the
Hechsher(a rabbinical seal certifying their validity) is
for.

- A superior Esrog is of medium
size, its bright yellow surface is furrowed and covered
with Blitos, bumps (a feature which distinguishes it from
the ordinary lemon).
- To be considered ritually
fit, the Esrog must be shaped "like a tower"--its bottom
larger than its top.
- The Pitom, the flowered
blossom at the tip of the fruit, and Uketz, the stem which
is sunk into the broad base, must be examined carefully
to make sure that both are present and intact. (If the Pitom
falls off or is broken during Sukkot, a rabbi should be
consulted. To avoid this problem, many people prefer to
use Esrogim which grow without Pitoms)
- The Pitom should be directly
in line above the Uketz.
